Apple Pie Breakfast Cookies

I don’t know if your kids are like mine, but mine like to wake up and eat something right away – we call this “first breakfast”. Second breakfast comes a bit later once I’ve woken up a bit more and make something else for them to eat. Well these apple pie breakfast cookies are a great “first breakfast” (or second breakfast or only breakfast :)). They are an easy option for your kids to grab right when they wake up and a great breakfast if you need to head out the door quickly in the morning.
I also love how freezer friendly they are. Just put them in the microwave for a few seconds to reheat after freezing or you can put them in a school lunch box in the morning and they will be defrosted for lunch.
These healthy apple pie oatmeal cookies also make a great afternoon snack for the whole family. They are meant to be healthy and filling and the maple syrup adds great flavor and the perfect amount of sweetness.
Breakfast cookies are not a dessert cookie and so will not be as sweet as your typical cookie, however they are very delicious and are eaten up quickly in my house!
How to Make Apple Pie Breakfast Cookies
Ingredients
- Rolled old-fashioned oats
- Whole wheat flour or all-purpose flour
- Butter
- Spices: cinnamon, nutmeg, ground cloves – You can substitute apple pie spice if you don’t have these spices
- Flaxseed – (optional)
- Pure maple syrup
- Unsweetened applesauce
- Diced apple – red apples, green apples, any kind of apple will taste good! I used red fuji apples when I made mine.
Process
Preheat your oven to 350°F
In a large bowl, combine the old-fashioned rolled oats, flour, cinnamon, nutmeg, ground cloves, salt, baking powder, and flaxseed. Stir well to combine.
In another bowl, whisk together the maple syrup, applesauce, melted butter, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the apple chunks.
Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking sheet.
For the best results I flatten them out a little bit with the back of your spoon or a spatula as they will not spread while baking.
Bake for 10-12 minutes. Allow to cool on the cookie sheet for a few minutes before transferring to a wire cooling rack.

Mix-Ins
Feel free to add raisins or chopped nuts to your cookies for an extra boost of flavor. Toasted walnuts or chopped pecans would both be great additions!
Storage
Store in an airtight container at room temperature for 2-3 days or in the fridge for up to 5 days.
You can also freeze leftover cookies, so make a double batch and thank yourself later 🙂
