Easy 3 Ingredient Lemon Popsicles

These homemade lemon popsicles are sunshine in a popsicle and make a delightful frozen treat for the whole family! They are easy to make and only require 3 simple ingredients: honey, lemons and water. You can put them together quickly for a refreshing summer dessert perfect for hot summer days!

Homemade Lemon Popsicles


Making fresh squeezed lemonade is a weekly routine in our house come summertime and I know this lemonade popsicle recipe will be a family favorite this summer.   The combination of fresh lemon juice and honey is so simple and refreshing on a hot day.  My husband always laughs when I say something tastes refreshing, but really, there is no better word!  

The balance of tart lemons and the sweet honey is a match made in heaven and I know these homemade lemon ice pops will take you straight to sweet summer days with sticky hands and sun-kissed cheeks.  (Can you tell it’s been a long winter and I’m dreaming of sunshine and warm weather over here? :)) – Let’s get started!

Ingredients and Tools

  • Fresh Lemons
  • Honey (can be substituted with maple syrup – just know the color will be darker)
  • Water
  • Lemon zest (optional- adding it will enhance the fresh lemon flavor)
  • Silicone popsicle mold – see note below if you don’t have a popsicle mold!

  • I love the fact it only requires 3 fresh ingredients and is free of artificial sweeteners and all the extra stuff you find in store bought popsicles.

  • A great way to use a few extra lemons and the recipe doesn’t need as many as a full batch of lemonade

How to Make Homemade Lemonade Popsicles

  1. Add your freshly squeezed lemon juice to a quart sized mixing bowl
  2. Whisk in your honey
  3. Add water and lemon zest (if using) to the bowl and mix well
  4. Pour the mixture into popsicle molds and place in the freezer until frozen (around 5-6 hours or overnight)
  5. Enjoy your fresh lemon popsicles!

Tips and Variations

If you don’t have a popsicle mold you could pour your mixture into dixie cups.  Place the dixie cups in the freezer for an hour and then add your popsicle sticks and put them back in the freezer until they are frozen.  

This recipe would be great with fresh fruit muddled and incorporated into the mixture.  (Fresh raspberries, strawberries, blackberries… Yum. )

If you would like creamy lemon popsicles you can substitute one or both cups of the water with coconut milk or heavy cream. 

You could use bottled lemon juice instead of fresh squeezed, but may need to increase the amount of honey as bottled lemon juice is more concentrated and will be more tart.

Swap the lemons for lime juice for a limeade popsicle!

Storage

I usually store my homemade popsicles in the popsicle molds in the freezer.  You could also take them out and store them in a freezer bag or an airtight container in the freezer.  They will keep for 3-4 weeks.

  • 1/4 cup honey
  • 1/3 cup lemon juice
  • 1 tbsp lemon zest (optional)

Instructions

  1. Add your freshly squeezed lemon juice to a quart sized mixing bowl.
  2. Whisk in your honey.
  3. Add water and lemon zest (if using) to the lemon and honey and mix well.
  4. Pour the mixture into popsicle molds and place in the freezer until frozen - usually 5-6 hours or overnight.
  5. Enjoy!

Notes

If you would like creamy lemon popsicles you can substitute one or both cups of the water with coconut milk or heavy cream.
