Cake Mix Christmas Cookies

This cake mix cookie recipe uses simple ingredients, they are easy to make and are sure to bring some extra holiday cheer!

Ingredients
  

  • 1 box white cake mix
  • 2 egg whites
  • 2 Tbsp flour
  • 1/2 cup olive oil
  • 1/2 cup M&Ms
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • In a large bowl mix the cake mix, egg whites, flour and olive oil together
  • Mix in the M&Ms and chocolate chips
  • Roll dough into 1x1 balls and place on cookie sheet
  • Gently push the cookie dough balls down just a bit to create a cookie form 
  • Add a few M&Ms and chocolate chips to the top to make the bright Christmas colors stand out
  • Bake for 6-7 minutes
  • Immediately remove from the baking sheet and put on cooling rack & let cool at room temperature

Notes

  • These can be stored in an airtight container for 3-5 days. You can also freeze them for up to 3 months. 
  • Don't overbake, cookies finish quickly in the last 1–2 minutes. Remove when set and no longer doughy.
  • Move cookies off the baking sheet and onto a wire rack right away to prevent overly crispy bottoms.
  • Any boxed mix works, but extra moist white is a favorite. Try flavors like strawberry or French vanilla for variety.
  • Bake on a parchment-lined baking sheet for easy clean up.
