Preheat your oven to 375°F and lightly grease your mini muffin pan
In a large bowl whisk together your dry ingredients: flour, baking powder, and salt
In a separate bowl combine your wet ingredients: milk, egg, maple syrup, melted butter, and vanilla
Pour the wet ingredients into the dry ingredients, stirring just until combined to form your pancake batter. Fold in your favorite mix-ins
Spoon the batter into the greased muffin tins, filling each cup about 3/4 full. Place a few extra mix-ins on top if desired.
Bake in the oven for 12-15 minutes, or until the tops are golden brown and a toothpick comes out clean
Let them cool for a few minutes in the pan and then remove from the tin and serve with a side of maple syrup
Notes
You can omit the mix-ins from the batter if you would prefer. You could also just add a few berries or chocolate chips on top of the muffins before baking!
