Wild Rice Chicken Salad with Grapes and Cashews

A refreshing chicken salad full of texture and flavor. An easy cold lunch for any season!

Ingredients
  

  • 2/3 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon honey or dijon mustard
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 cups cooked wild rice
  • 1.5 cups halved grapes
  • 1 cup cashews
  • 2 cups cooked shredded chicken
  • 1/4 cup green onion

Instructions
 

  • In a large bowl combine the mayonnaise, honey, mustard, salt, pepper, and lemon juice.
  • Add the wild rice, grapes, cashews, chicken, and green onion.
  • Stir until well combined.
  • Cover and refrigerate until ready to serve.

Notes

Store covered in the refrigerator for up to 5 days.
