Mini Pancake Bites Recipe

They are made with simple ingredients, easy to make ahead of time and baked in a mini muffin tin making them the perfect size to take on the go for busy mornings or a fun afternoon snack!

We love slow weekend mornings and pancakes are a favorite meal in our house. These mini pancake muffins have quickly become a family favorite when we are wanting pancakes mid-week and need a grab and go breakfast!

All the flavors of classic pancakes in bite-sized form, these mini pancake muffins are a great way to switch up your morning breakfast routine.

​We have officially added them to our list of favorite quick breakfast recipes, alongside of our apple pie breakfast cookies and these chocolate oatmeal muffins!

These mini pancake bites are also fun for kids to customize with their favorite toppings from melted chocolate chips to fresh fruit, they are a hit with everyone!

Ingredients 

  • Flour
  • Baking Powder
  • Salt
  • Milk or buttermilk
  • Egg
  • Maple syrup
  • Butter
  • Vanilla extract
  • Mix-ins (chocolate chips, bacon crumbles, blueberries, raspberries, etc)

How To Make These Pancake Bites

Step One: Preheat your oven to 375°F and lightly grease your mini muffin pan

Step Two: In a large bowl whisk together your dry ingredients: flour, baking powder, and salt

Step Three: In a separate bowl combine your wet ingredients: milk, egg, maple syrup, melted butter, and vanilla

Step Four: Pour the wet ingredients into the dry ingredients, stirring just until combined to form your pancake batter. ​Fold in your favorite mix-ins

Step Five: Spoon the batter into the greased muffin tins, filling each cup about 3/4 full. Place a few extra mix-ins on top if desired.

Step Six: Bake in the oven for 12-15 minutes, or until the tops are golden brown

Step Seven: Take out of oven and let them cool slightly, then remove from the tin and serve with a side of maple syrup

Mix-In Ideas

  • Chocolate chips
  • Fresh fruit like blueberries, raspberries or cut up strawberries
  • ​Bacon crumbles
  • Cinnamon sugar to sprinkle on top

Storage

Store in an airtight container in the fridge for up to 3 days.

Freeze in a freezer bag for easy meal prep and take out and reheat when you are needing a quick breakfast!

  • 1 teaspoon vanilla
  • 1/2 cup mix ins

Instructions
 

  • Preheat your oven to 375°F and lightly grease your mini muffin pan
  • In a large bowl whisk together your dry ingredients: flour, baking powder, and salt
  • In a separate bowl combine your wet ingredients: milk, egg, maple syrup, melted butter, and vanilla
  • Pour the wet ingredients into the dry ingredients, stirring just until combined to form your pancake batter. ​Fold in your favorite mix-ins
  • Spoon the batter into the greased muffin tins, filling each cup about 3/4 full. Place a few extra mix-ins on top if desired.
  • Bake in the oven for 12-15 minutes, or until the tops are golden brown and a toothpick comes out clean
  • Let them cool for a few minutes in the pan and then remove from the tin and serve with a side of maple syrup

Notes

You can omit the mix-ins from the batter if you would prefer.  You could also just add a few berries or chocolate chips on top of the muffins before baking!
