Easy S’mores Bars Recipe

There’s something about classic s’mores that instantly transports you to summer nights around the campfire. But let’s be honest, sometimes you just want all that gooey, chocolatey goodness without needing a fire pit. These s’mores bars are just the BEST, they are a family favorite and I’m so excited to share them with you!

With a soft, chewy cookie base with pockets of melted chocolate and golden marshmallows this recipe brings that campfire treat vibe right into your kitchen. They’re baked in a 9×13 pan, made with simple ingredients, and are always a hit with kids and adults alike.

These bars are a great go to recipe when you are looking for an easy dessert bar for picnics, parties, or just a lazy summer afternoon. Pair it with this s’mores trail mix and you have yourself a fun camping themed dessert spread.

I’ve made these bars multiple times recently and the pan doesn’t last more than 1 day in our house. They always get rave reviews, just be careful, these are the kind of bars you can’t just have one of. 🙂 

Ingredients

  • Salted butter, softened (not melted!)
  • Brown sugar
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • All purpose flour
  • Cornstarch
  • Baking powder
  • Salt
  • Hershey’s chocolate bars
  • Graham crackers
  • Mini marshmallows

Instructions

Preheat your oven to 350°F

Grease a 9×13 baking pan or line it with parchment paper for easy cleanup

In a separate large bowl, use a spoon or spatula to stir together the softened butter, brown sugar, and granulated sugar until smooth and combined, if you are using an electric mixer I recommend using it on low to medium speed

Add in the eggs, egg yolk, and vanilla extract, stirring again until fully incorporated

In another bowl, whisk together the flour, cornstarch, baking powder, and salt

Slowly add the dry ingredients into the wet mixture, stirring until combined, don’t over mix

Cut up 1/2 the chocolate pieces into smaller chunks, setting the rest aside for later

Break up the graham crackers with your hands, set 1/2 aside for later

Gently fold in the chocolate pieces, graham cracker chunks, and about half of the mini marshmallows

Press the dough into an even layer in the prepared baking pan

Bake for 25 minutes, until lightly golden on the edges.

Remove from the oven, sprinkle the remaining marshmallows, extra chocolate bars and graham cracker pieces across the top of the bars, then return to the oven for 5 more minutes, just until the marshmallow layer starts to turn golden brown

Let cool to room temperature before slicing into bars

Store leftovers in an airtight container at room temp for 2–3 days

Tips For The Best S’mores Bars

Softened butter is key! Melted butter can make the bars overly greasy, so let your butter sit at room temperature before starting.

If you love extra gooey texture, add a mix of mini marshmallows and marshmallow fluff to the top of the bars before the final bake.

Use a mix of milk chocolate chips and dark chocolate chips for a richer chocolate flavor, or toss in a few peanut butter chips for a fun twist.

  • 4 graham crackers
  • 1 cup marshmallows

  • 13. Let cool & enjoy!

Notes
