Root Beer Float Popsicles

These root beer float popsicles are a perfect summer treat. With creamy ice cream and cold root beer mixed up into beautiful popsicle perfection, it’s a recipe the whole family will love.

Some treats just taste like summer and root beer floats are one of them for me. Growing up my mom loved root beer floats and it was such a treat when we got to have one on a hot summer day. We would gather around the kitchen, scoop big dollops of creamy vanilla ice cream into glasses and top off with cold root beer. It was so simple and sweet and felt so special. 

This week, in the middle of a hot stretch of summer days I decided to turn this classic treat into something a little more frozen and my 10 year old helped me make up the perfect batch of root beer float popsicles.

These are one of the easiest snacks we have made this summer and my kids are already begging to make them again!

Ingredients

Vanilla bean ice cream (or any creamy vanilla ice cream you love, we just love the flavor of vanilla bean)

Root beer (We used A&W root beer but feel free to use your favorite brand!)

How To Make These Root Beer Popsicles

Let the ice cream soften a little bit, then stir it together with the root beer in a bowl using a wooden spoon until smooth and creamy. The mixture will be frothy and that is just fine.

Place the popsicle sticks into your popsicle molds, we prefer these silicone molds when making popsicles.

Pour the root beer mixture into your popsicle molds.

Freeze for at least 2-3 hours (I like to check after 2 hours and see if they’ve firmed up, especially if little hands are waiting 🙂 )

Tip: If your popsicles stick to your popsicle mold try dipping the bottom of the mold (not directly touching the popsicles) in hot water and they should slide right out.

Variations To This Recipe

We love the classic flavor of this recipe, however if you are wanting to play with the recipe a bit here are some options:

  • Add some heavy cream with your mixture for more of a cream popsicle 
  • For a sweeter popsicle you could add a little swirl of chocolate 
  • For a low carb version use sugar-free soda and light ice cream

  • 3 cups vanilla bean ice cream
  • 3 cups root beer

Instructions
 

  • 1. Let the ice cream soften a little bit, then stir it together with the root beer in a bowl using a wooden spoon until smooth and creamy. The mixture will be frothy and that is just fine. 
  • 2. Place the popsicle sticks into your popsicle molds, we prefer the silicone molds linked below when making popsicles
  • 3. Pour the root beer mixture into your popsicle molds
  • 4. Freeze for at least 2-3 hours (I like to check after 2 hours and see if they've firmed up, especially if little hands are waiting 🙂 )
  • 5. Remove from molds and enjoy!
