Finding healthy snacks for kids is something I seem to always be thinking about, especially in summer when my kids turn into snack monsters and seemingly change their minds about their favorite snacks every day.

However, if I want an easy win every time I make these banana mini muffins or these chocolate chip mini muffins my kids devour them! They are one snack my kids ask for on repeat and they love when I add them to their lunch boxes or make them as an after school snack.

I love recipes that can be made in one bowl, these chocolate oatmeal muffins are another easy recipe to whip up for breakfast or a healthy treat!

  • Overripe bananas: The more brown spots the better!
  • Greek yogurt: Adds moisture and makes the muffins soft
  • Maple syrup: Used as a natural sweetener
  • Egg
  • Butter
  • Flour: I use all purpose, but you could sub with whole wheat flour

How To Make Banana Bread Mini Muffins

  1. Step 1: In a large bowl, mash the bananas until glossy.

  1. Step 2: Add the rest of the wet ingredients and mix well with the bananas.

  1. Step 3: Add the dry ingredients directly to the bowl with with wet ingredients.

  1. Step 4: Mix until just combined.

  1. Step 5: Add the silicone liners and fill the mini muffin tins evenly. Bake at 350 degrees F for 12-15 minutes.

  1. Step 6: Let cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.

Hint: These reusable silicone muffin tin liners make it such a breeze to remove the muffins from the pan and clean up afterwards is so much easier!

Substitutions

If you love banana bread with mix-ins, such as walnuts, pecans, or chocolate chips you could add a handful to the batter before dividing into the muffin tins.

You can use granulated sugar, brown sugar or honey in place of the maple syrup.

Storage

Store in an airtight container at room temperature for 2-3 days.  

Store in the freezer in an airtight container, plastic wrap or freezer bag for 2-3 months.

Banana Bread Mini Muffins

These banana bread mini muffins are full of sweet banana flavor and make the perfect bite sized snack for toddlers and kids!

Ingredients
  

  • 3 medium bananas
  • 4 tablespoons melted butter
  • ¼ cup plain greek yogurt
  • 1 egg
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup flour

Instructions
 

  • In a large bowl mash the bananas well until they are glossy.
  • Add the melted butter, egg, greek yogurt, maple syrup, and vanilla and stir until combined well with the bananas.
  • Add baking soda, salt, cinnamon and flour to the wet ingredients and mix until combined.
  • Bake at 350 degrees for 12 to 15 minutes.
  • Let the muffins cool in the pan for 5 minutes and then transfer to a wire rack.

Notes

Use ripe bananas with a lot of brown spots for sweet muffins! If your bananas are not overripe, feel free to up maple sugar to ⅓ cup if you like a sweeter muffin.
