We love simple treats like these yogurt covered banana popsicles and this frozen yogurt bark and these Lucky Charms bars are no exception. It is so fun to find a recipe that my kids can help with and I love that it’s such an easy recipe to make. I think my son’s favorite part of making these was picking out the marshmallows in the cereal and I can’t say I didn’t sneak a few too!

I’m going to let you in on a little secret, by browning the butter you boost the flavor of these bars, setting them apart from the rest! It takes no additional time and is a game changer when baking. 

This recipe is a fun twist to the classic Rice Krispie treats with rice cereal. Perfect for St. Patrick’s Day, birthday parties, or a school snack, these are an easy dessert that kids and adults will love! 

The best part of this recipe is that you have one pan to wash at the end of cooking, the recipe only uses 5 ingredients and within 30 minutes they are ready to eat! Just be careful, your kids may convince you that this is a breakfast treat because there is cereal in them. 😊

Ingredients

  • Lucky Charms cereal
  • Mini marshmallows
  • Unsalted butter
  • Salt
  • Vanilla

How To Make This Easy Dessert

Prep your 9×9 square pan with nonstick cooking spray

In a large saucepan over low/medium heat melt your butter until it starts to foam, it takes about 2-3 minutes for this to happen

Turn your stove to low heat and stir your butter constantly until it gets a light brown color and then turn off the heat on the stove

Add vanilla and salt to the butter in the sauce pan and stir

Add your mini marshmallows to the saucepan, gently stirring until the marshmallows soften

Put your stove back on low heat and stir until the marshmallows are soft and gooey with minimal lumps

Turn off heat on your stove and add the cereal to the saucepan, making sure to keep some Lucky Charms marshmallows for the last step

Stir gently until the marshmallow mixture covers all of the cereal

Transfer the cereal mixture your prepared 9×9 pan and press into an even layer using a metal spatula- be sure not to push too hard during this step

Sprinkle extra lucky charms marshmallows on top and gently press them in. Let the cereal treats cool at room temperature for about 30 minutes

Tips & Tricks When Making These Lucky Charms Rice Krispie Treats

  • Use fresh marshmallows and don’t overcook them! If you overcook the marshmallows your bars will become incredibly sticky
  • Low heat prevents scorching and helps keep the melted marshmallows smooth
  • Be ready to work quickly. Once the butter is browned you need to immediately add the salt and vanilla and then marshmallows. When the marshmallows are melted you need to add the cereal right away and then once mixed move into the 9×9 pan right away so that you get them formed in the pan before they harden. 
  • Bring extra color to your bars– reserve a few Lucky Charms marshmallows to put on top of your bars when they are still warm, push them down lightly and you will have bright, colorful bars to serve!

Variations To This Recipe

  • If you don’t have unsalted butter you can use salted butter and just cut the added salt in half
  • You can use regular sized marshmallows but they may take a little longer to become soft/gooey
  • Be very attentive when browning your butter, after the butter melts it browns fairly quickly and can burn so it’s important to watch it closely and constantly stir. This article talks a little more about the art of browning butter if you are interested. 
  • Try drizzling melted white chocolate on top for an extra sweet treat

Storage & Serving Suggestions

Store in an airtight container at room temperature for up to 4 days.

Wrap in plastic wrap or place between layers of wax paper to prevent sticking.

  • 6 cups Lucky Charms cereal
  • 20 oz bag mini marshmallows
  • 1 stick unsalted butter
  • 1 tsp salt
  • 1 tsp vanilla

Instructions
 

  • 1. Prep your 9×9 square pan with nonstick cooking spray
  • 2. In a large sauce pan melt your butter over low/medium heat until it starts to foam (this takes 2-3 minutes)
  • 4. Turn your stove to low heat and stir constantly until your butter becomes a light brown color
  • 5. Turn off the heat on the stove, add vanilla and salt to the sauce pan and stir
  • 6. Add your mini marshmallows to the sauce pan and start gently stirring until the marshmallows soften
  • 7. Put the sauce pan over low heat and stir the marshmallows until they are soft and gooey with minimal lumps
  • 8. Remove pan from heat and add Lucky Charms to the saucepan (making sure to keep some Lucky Charm marshmallows for the last step)
  • 9, Gently stir until the marshmallow mixture covers all of the cereal
  • 10. Transfer mixture to a prepared 9×9 pan and press into an even layer making sure to not push too hard
  • 11. Top with the saved Lucky Charms marshmallows, gently pushing them onto the top of the bars
  • 12. Let cool at room temperature for 30 minutes and then cut and serve!

Notes

1. Make sure to use fresh marshmallows for the gooiest treats
2. Be careful not to overcook the butter to avoid it burning
3. For an extra sweet treat you could drizzle white chocolate on the top of the bars
4. These will stay good for 4 days in an air tight container at room temperature
