Key Ingredients

- Italian sausage - I always use mild because it's what my family prefers, but you could also use spicy or sweet!
- Cheese tortellini - make sure to get refrigerated tortellini, it's texture and flavor is better than shelf stable tortellini, although you could use dry or frozen tortellini in a pinch.
- Baby spinach
- Chicken broth
- Crushed tomatoes
- Petite diced tomatoes
- Heavy cream - could also substitute half and half
- Onion
- Italian seasoning
- Garlic
- Carrots
How To Make Crockpot Tortellini with Sausage & Spinach

- Step 1: Add olive oil to a large skillet and saute the Italian sausage and onion until it is cooked through. Add the garlic for 30 seconds and saute until fragrant.

- Step 2: Add the meat and onions to the crockpot along with the carrots, tomatoes, chicken broth and seasonings. Cook on high for 4-5 hours or low for 7-8 hours.

- Step 3: Add the tortellini, cream and chopped spinach and cook on low for 30 more minutes.

- Step 4: Top with grated parmesan cheese and enjoy!
Hint: If you are cooking your soup for the shorter amount of time on high heat the carrots will take the longest to cook, so make sure to chop them smaller and taste them to make sure they're done!
Substitutions
- Spinach- You could substitute the spinach with kale
- Heavy cream - You could use half and half in place of cream
- Sausage - If you would like to make a vegetarian soup, you could leave out the sausage and add in white beans at the same time you add your tortellini to give your soup more substance. I've made it this way before and it was great!
This soup tastes delicious alongside bread or a salad!
Storage
Store the soup in an airtight container in the refrigerator for up to 3 days. The tortellini will soak up some of the liquid, so when you reheat your soup you may need to add additional broth or liquid.
Top Tip
I recommend you use a 7 quart size crockpot like this one or larger, because it does make a large batch of soup and will fill it up!

Yes, If you use frozen tortellini just make sure to defrost it before you add it to the soup. If you use dried tortellini cook it separately and add it into the soup after it's done. For the best tasting soup though, I recommend you stick with fresh, refrigerated tortellini.
Yes, feel free to leave out the sausage to make this a vegetarian soup. You could add in beans at the end with the tortellini to give the soup more substance.
You can separate the tortellini from the soup and store it in a separate container so it doesn't soak up so much liquid and become mushy.

- 1 tablespoon olive oil
- 16 ounces Italian Sausage
- 1 small onion diced
- 4 cloves garlic minced
- 4 carrots chopped or diced
- 1 14 ounce can diced tomatoes
- 1 28 ounce can crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 2 9 ounce packages of refrigerated cheese tortellini
- 1 cup heavy whipping cream
- 2 cups baby spinach chopped
- Salt and pepper to taste
- Parmesan Cheese shredded
Instructions
- Add the olive oil to a large skillet and saute sausage and onion over medium high heat. When the sausage is browned add the garlic for 30 seconds until fragrant and then add it to the crockpot.
- Add chopped carrots, diced tomatoes, crushed tomatoes, chicken broth and Italian seasoning to the crockpot. Cook on high for 4-5 hours or on low for 7-8 hours.
- Add the tortellini, cream and chopped spinach and cook on low for 30 additional minutes. Add salt and pepper to taste. Serve with shredded parmesan and basil if desired.
