Baked Apple Cinnamon Overnight Oatmeal

I love finding recipes that are healthy, fill my kids up and are easy to make! I love that I can make it the night before and just bake it in the morning! We love to meal prep for the week and this oatmeal is so good reheated and is one of our favorite breakfast recipes for busy mornings. The best thing about this recipe is that my kids love it just as much as I do!

This baked oatmeal recipe is incredibly adaptable. We make it in a 9×9 pan and it feeds our family for many mornings. However, if you are planning to prepare this dish for a crowd you can easily double the recipe to feed everyone. It makes the best breakfast for Christmas morning!

I love that I can make this meal the night before so I can just pop it in the oven in the morning and avoid the fuss and prep in the morning when everyone is hungry. There is nothing better than waking up and the entire house smelling like warm cinnamon.

​Ingredients

  • Eggs
  • Maple syrup
  • Baking powder
  • Salt
  • Ground cinnamon
  • Vanilla extract
  • Whole milk
  • Butter
  • Apples 
  • Quick oats

How To Make Your Apple Cinnamon Overnight Oatmeal Bake

  1. Grease a 9×9 baking dish
  2. In a large mixing bowl whisk the eggs
  3. Add in maple syrup, baking powder, salt, cinnamon and vanilla and mix until smooth
  4. Melt the butter and add it and the milk into the mixing bowl
  5. Add the oats and mix until combined
  6. Dice the fresh apples and then fold into the mixture
  7. Put the oat mixture into the 9X9 pan and smooth flat
  8. Cover & store overnight in the refrigerator 
  9. The next morning preheat the oven to 350°F
  10. Take out the oatmeal bake, uncover and bake for 40 minutes or until set
  11. Add syrup or brown sugar to top when serving

Variations When Making This Cinnamon Apple Oatmeal

If you don’t have time to let the oatmeal sit overnight you can bake it right away, however we prefer letting the oats soak overnight

You can substitute the maple syrup for agave or honey, however that may change the flavor profile a bit

​You can easily double the recipe and make in a 9×13 pan

This recipe has no added sugar, if you prefer your oatmeal on the sweeter side I would add a 1/2 cup of sugar to the recipe

Storage & Reheating Instructions

Store in an airtight container in the fridge and it will last up to 3 days. You can take it out of the refrigerator and either reheat it for 20 minutes in the oven or for a few minutes in the microwave and your delicious breakfast will be ready to eat!
